To make the Easter cookies crispy, all the ingredients must be at room temperature and the butter soft.

Weigh each cookie 30 g.In total we will have 50 pieces of cookies

Ingredients for the dough :
For ▪ 750 gr. self raising flour of (Sifted)
▪ 260 gr. powdered sugar
▪ 2 whole eggs
▪ 400 gr. of butter that we like best
▪ zest of 1 lemon
▪ zest of 1 orange
▪ 1/2 teaspoon salt
▪ 2 vanilla pods or 2 teaspoons of vanilla extract

▪ If we want our cookies to be extra puffy then we can add extra ▪ 1 bag of baking powder 15 g.

▪ The biggest secret to perfect success is to melt the sugar
very well, that's why we add powdered and not crystalline.
Because we should beat for at least 8 to 10 minutes and
maybe longer for the sugar to melt.

I want it to absorb all the flour really well

Topping :
▪ 1 whole egg
▪ 1 tablespoon of sugar
▪ 2 tablespoons of water

We will bake in a preheated oven at 160 °C (If your oven is too weak then raise the temperature to 170 to 180 °C)
On the resistances for about 20 to 25 minutes, depending on how strong or weak the oven is. We will place our pan in the middle of the oven.

After they have cooled completely, keep them in an airtight container so that they remain fluffy and crunchy.
