Baklava With Almonds and Many Secrets Step by Step

Preparation time : 1 1½ hour
Cooking time : Overall Bake in the oven for 22 ½ hours (Depending on the oven) until it becomes crispy.

For the large kitchen pan : 41 x 34 / height: 7 cm
Components :

▪ 2 kilos of peeled almonds
( Clean the almonds, but do not rinse them, we want them to have as ittle water as possible. )

Roast the almonds: In a preheated oven at 160 °C, in the middle of the oven. We will divide our almonds into 3 equal parts and roast them for 15 to 20 minutes. At regular intervals we will mix them so that they get a nice rosy red color, exactly as you see them.
Of course, if we want, we can also do the following: Peel our almond 5 to 6 days earlier, so that it has time to dry very well.

We can of course replace the almond:
▪ 2 kg of walnuts or ▪ 2 kg of pistachios or ▪ 2 kg of roasted sesame

(This machine, in the way it cuts and processes the almond, extracts its oils. So that the baklava has a perfect, tastier result. ) If you have a food processor with a wave machine attachment with a high attachment you can use it

▪ 2 cups of breadcrumbs (230 g)
▪ 3 teaspoons of grated cinnamon (9 g)
▪ 1/2 teaspoon ground cloves

▪ 2 kilos of crust leaves
▪ Extra virgin olive oil for the bottom of the pan

We used all of the crust sheet and all of the filling

▪ I need a pack of clove nails ( Cloves whole )

▪ 3 cups extra virgin olive oil (500ml)
▪ 2 cups of vegetable or animal butter (350ml)
▪ Aluminum foil and ▪ baking paper
( This step should not be skipped, it is very important for it to be baked properly ) Bake for 1 hour at 180 °C / Then you will follow the instructions that I will give you ....

Syrup

▪ 2 ½ kilos of sugar
▪ 3 lemon peels
▪ 1/2 whole orange
▪ 5 glasses of water (1½ kilos of water)
Add to the syrup during the last 2 minutes:
▪ The juice of 1 lemon (70ml)
▪ 2 vanilla pods
▪ 1/2 teaspoon of salt
If you are a beginner housewife and you are afraid that your syrup will caramelize, add: ▪ 3 tablespoons of glucose

Boil for 5 to 7 minutes. Depending on how strong or weak the hearth is.

Baklava and syrup should both be very hot.
