Ingredients:
12 Tablespoons Olive or Vegetable Oil
1 Large Sweet Potato, Peeled & Cubed
1 Bell Pepper, Chopped
1/2 Cup Yellow Onion, Chopped
2 Teaspoons Minced Garlic (2 Garlic Cloves)
6 oz. Cooked Sausage
Garlic Salt to Taste
1 Teaspoon Smoked Paprika
1/2 Teaspoon Cumin
1 Teaspoon Crushed Red Pepper Flakes
1 Teaspoon Oregano
1/2 Cup Shredded Muenster or Pepper Jack Cheese
Eggs
Directions:
1. Heat oil in a skillet over medium high heat. Add the sweet potato; cover and cook until lightly browned and starting to soften, about 7 minutes, stirring occasionally. Add the bell pepper, onion, and garlic. Continue to cook until bell pepper softens. Add the sausage and seasonings. Cook 23 more minutes until sausage browns. Top with shredded cheese and remove from heat, cover and allow cheese to melt.
2. Serve topped with 2 fried eggs.
