Swiss Vegetable Casserole

2 Tablespoons butter
1/2 cup onion, chopped
2 Tablespoons allpurpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk
8 ounces shredded Swiss cheese
1 pound frozen broccoli and cauliflower, cooked and drained
About 24 Ritz Crackers, crushed

Preheat oven to 350°.

Spray a 8 x 8” casserole dish with cooking spray; set aside.

In a medium saucepan, sauté the onions in the butter for three minutes or until tender. Stir in the flour, salt, and pepper. Cook, stirring constantly, for about one minute. Gradually add the milk, whisking constantly. Cook until this mixture is bubbly and thick. Remove from the heat. Add half of the cheese; stirring to melt. Gently fold in the cooked vegetables. Spoon the mixture into the casserole dish. Sprinkle with the remaining cheese and top with the crushed crackers.

Bake for 20 minutes until it’s heated through and bubbly.
