Tagliolini with truffles

Ingredients for two people:
Black Truffle 40 gr
Butter 30 gr
Evo oil 40 gr
1 garlic
Salt to taste.

For the tagliolini
3 eggs
300 grams of flour 0

In a pan heat the oil with the butter and garlic. As soon as you smell the oil, remove the garlic and turn off the flame. With the help of a mandolin, slice half a truffle.
pour the slices into the still hot pan.

To prepare the tagliolini, prepare a fountain on the pastry board, place the eggs in the center of the fountain and start beating them. Add the flour a little at a time to form the dough which we will leave to rest for half an hour.

Roll out two discs of dough and cut the tagliolini.
When the water boils, put a handful of coarse salt in the water and add the pasta. Once cooked, drain the tagliolini and put them with a little cooking water to stir in the pan. Serve and complete with the remaining tartudo flakes.
