Thali, a festival of Indian cuisine recipes
Today I present to you Thali. I'm sure many of you think of it as a dish, but it actually means a large plate or tray. It also refers to a complete meal consisting of several different dishes presented on a platter.
Today's Thali is a Vegetarian Thali, consisting of six dishes: Paneer Tikka Masala, Dal, AlooPalak Sabji, Jeera Pulao, Raita and Kheer.

Ingredients for Paneer Tikka Masala:
To macerate the paneer
300 g of paneer cut into 3 cm cubes
2 tablespoons of chickpea flour (Besan)
2 tsp Kashmiri chilli (This chilli has a very nice colour but is fairly mild in spiciness)
2 tablespoons of olive oil
1 tablespoon of gingergarlic paste
4 tablespoons Greek yoghurt
1 teaspoon Garam Masala
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 tsp Kasuri Methi (dried fenugreek leaves) Salt to taste
Salt to taste
For the sauce
3 tablespoons of olive oil
1 bay leaf
3 green cardamoms
1/2 cinnamon stick
1 tablespoon gingergarlic paste
1/2 teaspoon turmeric
1/2 tsp Kashmiri chilli
1 teaspoon ground cumin
1 teaspoon ground coriander seeds
300g fried tomato or crushed tomato
Salt to taste
For the garnish
1/2 tsp Garam masala

Ingredients for the vegetable stew (AlooPalak Sabji)
300 g spinach, washed and chopped 300 g spinach, washed and chopped
1/2 aubergine, diced
1 large potato, diced
1/2 tsp fenugreek seeds (Methi)
1 cayenne
2 cloves garlic, finely chopped
half an onion, julienned
1 teaspoon turmeric

Ingredients for Dal
30 g red lentils (Masoor Dal)
30 g yellow lentils (Mung Dal)
1/2 teaspoon cumin seeds
1 cayenne pepper
1 small piece of onion cut into julienne strips 1 small piece of onion cut into julienne strips
1 tsp gingergarlic paste 1 tsp gingergarlic paste
1 ripe tomato, diced
1/2 teaspoon turmeric
1/2 tsp chilli
1 teaspoon cumin
Salt to taste
Water

Ingredients for the rice pilaf (Jeera rice)
300 g Basmati rice
600 ml hot water
50 g Ghee
1.5 tsp salt
1 teaspoon sugar
1 teaspoon cumin seeds
2 bay leaves
1 cinnamon stick
45 green cardamoms
1 black cardamom
67 cloves
Ingredients for Rice Kheer
50 g Basmati rice
80 g sugar
1 litre whole milk
45 green cardamom
2 bay leaves
sultanas and dried fruits for the guanition
