Authentic Kerala Dishes with my personal Touch
Ingredients
Payasam Rice 1cup
White Rice 1cup
Urad Dal 1/2cup
Fenugreek Seeds 1tbsp
Cooked Rice or Poha 2tbsp
Salt
Water
Garlic Chutney
Grated Coconut 1
Garlic 4
Ginger small
Curry leaves 2
Salt
Green chilli 4
Oil 3tbsp
Mustard seeds 1/2tsp
Red Chilli 2
Curry leaves
Water
Method
Take a bowl add 1 cup of payasam rice , 1 cup of white rice . wash this rice and soak for 3 hours. In another bowl add ½ glass of urid daal and 1 tbsp of fenugreek and soak it. You can soak it overnight or 3 hrs minimum. Grind the soaked rice with 2 tbsp cooked rice// puffed rice . grind the urid daal too. Mix both together. Grind the rice and the urid daal smooth consistency. Keep it for fermentation for 12 hours.
Add salt.
Make one dosa and see if it is coming out correctly. If not add more water.
Garlic chutney – take coconut, green chilly , curry leaves, 45 garlic, small piece of ginger. Add salt. With little water grind all this together. You can season the chutney if you like. Heat some oil add mustard seeds, whole red chilly and curry leaves. Add it to the garlic chutney.
On the dosa pan add very little oil on the pan. Add one ladle of dosa batter. if the bubbles pop out then the water content and heat is perfect. You can turn the dosa and cook the other side. Do not make the dosa too thin.thattil kutti dosa will be small and thick. Make the dosas. Control the heat and grease the dosa pan after every dosa.
