I like to follow Gordon Ramsay's approach to making seared scallops where you get your cooking surface as hot as possible. Unfortunately, when you do this in a pan, you don't always get the best of sear because the minute you add the cold food to the pan, it loses heat. So I decided to try making these on my Blackstone 36" griddle, and let me tell you, I may never make them again any other way!
The sear was amazing and the flavor was beyond excellent. It only took 12 minutes to completely cook these scallops. For seasoning, I simply used a little olive oil to start, then I placed salt & pepper on the scallops and then at the end I splashed a little lemon juice on top. Man were they good!
