0:00 LEMON SPAGHETTI!
Ingredients for 4 persons:
0,7lb/320g of spaghetti.
2 untreated lemons.
3,4oz/100ml of extra virgin olive oil.
4 lemon leaves.
1,7oz/50g of butter.
1oz/30g of Parmigiano Reggiano.
Salt.
Method:
Obtain zests from lemons, squeeze them and keep the juice aside; you can use it for other preparations or for a fresh lemonade.
In a saucepan add 2l of water, squeezed lemons, 4 zests, 4 lemon leaves and bring to boil. At the first boil, lower the heat and simmer 30 minutes.
Bring to boil a pot of water.
Blend the oil with the zests and let stand 10 minutes. Grate parmesan and sift the lemon oil.
Salt the water and throw down the spaghetti. Halfway through cooking drain in the pan, add a ladle of cooking water, 2 of lemon broth and finish cook adding broth when necessary. Turn off the stove and stir with lemon oil, butter and parmesan.
Serve with a drizzle of lemon oil and a grated of lemon zest.

04:42 LEMON&LIME PASTA!
Ingredients for 4 persons:
0,7lb/320g of spaghettoni.
4,20z/120g of butter.
4,2oz/120g of Parmigiano Reggiano.
1 lemon.
1 lime.
8 lime leaves.
1 clove of garlic.
Mint.
Salt.
Black pepper.
Method:
Obtain zest from lime and lemon. Squeeze them and with the juice make a great mojito.
For lime&lemon broth: bring to a boil a saucepan of water with squeezed lime and lemon, zest and lime leaves. When boiling, add salt, lower the flame and simmer for 20 minutes.
Grate the Parmigiano. In a pan melt the butter with garlic, zest and lime leaves. Add 2 ladles of broth, raise the flame and throw down the spaghetti. Cook adding broth. Add salt if needed. When the pasta is very al dente, take off garlic, zest, leaves and turn off the stove. Add mint, butter, Parmigiano and stir well.
Plate with plenty of sauce, mint, cracked pepper and lime zest.

10:18 SPAGHETTI with LEMON, ANCHOVIES & GARLIC!!!
Ingredients for 4 people:
0,9lb/400g of spaghetti.
16 anchovies in oil.
1 untreated lemon.
2 garlic cloves.
4 sprig of parsley.
0,5oz/15g of breadcrumbs.
Extra virgin olive oil.
Salt.
Method:
Cook spaghetti in plenty of salted water.
Peel the lemon and cut the zest into strips; put them in a saucepan with cold water and bring to a boil; drain and repeat 3 times. Finally cook with water and sugar until you get a slow syrup.
Chop the parsley and squeeze the lemon.
Toast the breadcrumbs with parsley, oil and garlic.
In a pan melt the anchovies with oil, butter, garlic and parsley stems. Remove garlic and parsley stems and add the lemon juice.
2 minutes before the time indicated, drain the spaghetti in the pan and finish cook with 1 ladle of lemon syrup and 1 of cooking water. Add parsley and cream with oil and cooking water.
Serve with plenty of toasted breadcrumbs, some lemon zests and a sprinkle of parsley.
