The French cake that proves that flour is useless! Gluten-free flour-free and delicious!

This French cake that even the French have forgotten :) This cake without flour, without gluten and so delicious that it's hard to believe it's a forgotten cake. This cake is called: Cambaceres. A Victorian recipe created by brothers Arthur and Auguste Julien. It is normally made with pie crust, which I decided not to add to keep it flour and gluten free and because it is much lighter to eat that way. Triple sec makes all the difference! It brings this wonderful orange taste! To test is to adopt it. Good tasting !

Ingredients :
60 g sugar (¼ cup)
4 eggs
60g butter (¼ cup)
1 shot glass of Triple Sec of your choice (50 ml)
125g ground almonds (about 1 cup)
60 g starch of your choice (½ cup)
15 g pistachios and 15 g almonds
15g granulated sugar
Apricot jam

1 The powdered almonds can be replaced by almond flour (it's just that I prefer using powdered almonds which brings another texture).
2 You can take any Triple Sec but it is mandatory in this cake, if you don't want to miss out on happiness :D (I tried with orange zest or Orange blossom but the result was disappointing compared to the Triple sec).
3 Apricot jam is also ideal, but you can still replace it with another yellow fruit jam.
4 The butter can be replaced by quality margarine or deodorized coconut oil.
5 The sugar can be replaced by a sugar substitute of your choice.
6 Chopped walnuts cannot be replaced, it's so perfect, believe me.
7 The starch used can be cornstarch, potato starch or arrowroot.
8 My mold had a diameter of 20 cm but you can go up to 25 cm in diameter.
9 The cake will keep for up to 57 days in an airtight container.
10 Be careful, do not unmold the cake before covering it with jam and the nut/sugar mixture.
