1. Rajma Chawal:
Rajma: Kidney beans cooked in a spiced tomatoonion gravy. Rajma is slowcooked to make it rich, thick, and flavorful.
Chawal: Simple steamed rice (chawal) is served as the perfect accompaniment to soak up the delicious rajma curry.
2. Kadhi:
A yogurtbased gravy, thickened with chickpea flour (besan), and tempered with spices like mustard seeds, curry leaves, and dry red chilies. It often has soft pakoras (fritters) made from chickpea flour added to it, making it tangy, creamy, and comforting.
3. Mix Veg:
A sautéed or semidry preparation of mixed vegetables such as potatoes, carrots, peas, cauliflower, and sometimes bell peppers, cooked with a variety of spices like turmeric, cumin, and garam masala.
4. Roti:
Soft, whole wheat flatbread served fresh, perfect for scooping up the curries and vegetable dishes.

Amritsari Kulcha is a popular stuffed flatbread from the city of Amritsar, Punjab. It's known for its crispy, flaky exterior and soft, flavorful filling. Traditionally, the kulcha is stuffed with a mixture of mashed potatoes (aloo), onions, spices like cumin, coriander, and sometimes paneer or chana (chickpeas). It's cooked in a tandoor (clay oven) to give it that signature crispiness, and it’s usually served with spicy chickpea curry (chole), tangy tamarind chutney, and a dollop of butter or yogurt.
