THE SECRET of the CRUSTEST DUCK in a beijing duck | Ievgen Klopotenko

I adore duck, so I decided to share with you a recipe for how to cook duck Peking at home. It will have an incredibly crispy crust and will remain juicy inside. We will make a special marinade for the duck, then dip it in a deep fryer and finally bake it in the oven. This recipe does not claim to be authentic, but allows you to get the closest possible taste to the original Peking duck recipe.


Portions: 1 pc.
Preparation time: 12 hours
Cooking time: 1 hour 30 minutes

Ingredients:
1 duck 2.5 kg
2 st. l. coriander seeds
2 cinnamon sticks
5 stars bodyan
180 g of salt (60 g per 1 liter of water)
2 st. l. honey
45 st. l. soy sauce
2 liters of frying oil
3 liters of water

How to cook Peking duck step by step recipe
Carefully separate the duck skin from the meat. To do this, put your hand under the skin and gently run along the entire carcass, separating all the joints of the meat with the skin. I did it on one side, on the side of the breast.

Boil in a large saucepan 3 liters of water to 80 degrees. Dilute 180 g of salt in water. Put the duck in a large bowl and fill with this water. Add 2 tbsp. l. coriander seeds, 2 cinnamon sticks and 5 star anise. Leave the duck to infuse for 1012 hours in this bowl, it is better to do it in the evening.

When the time has elapsed, dry the duck thoroughly with a paper towel so that no moisture remains at all, both outside and inside the carcass. This is necessary so that the duck can be deepfried and not fired.

Pour oil into a very large saucepan and heat until you notice small stains. You can check the deep fryer by carefully dipping the duck's foot: if there is a hiss, you can proceed to the next stage.

Dip the duck in the deep fryer and pour the oil, holding the neck with heatresistant tack or just a towel, because the temperature of the deep fryer is very high and there is a chance to get a burn. Water for 15 minutes on all sides until the duck acquires a light golden hue.

Then place the duck on a baking sheet covered with parchment. Grease 2 tbsp. l. spoons of honey and place in an oven preheated to 180 degrees, convection topbottom for 30 minutes.

In 30 minutes, remove the duck and grease 45 tbsp. l. soy sauce with a brush and return to the oven, changing the mode to grill.
