Longaniza Sausages Stuffed Zucchini recipe.
Ingredients (4 pieces):

2 large zucchinis (about 400 g / 14.2 oz each)
6 longaniza sausages (about 285 g / 10.1 oz approx.)
½ onion
1 garlic clove
1 carrot
30 ml white wine (2 tbsp)
20 g olive oil (1 tbsp + 1 tsp)
15 g allpurpose flour (1 ½ tbsp / 0.15 oz)
200 ml milk (¾ cup + 1 tbsp)
A pinch of nutmeg (¼ tsp)
Grated cheese of your taste for gratin [I used a semicured cow's cheese from the Valles Pasiegos in Cantabria (Spain)].

Easy recipe for Longaniza Sausages Stuffed Zucchini, step by step::

1⃣ Wash and dry the zucchini. Cut off the end and then in half lengthwise. With the help of a small spoon empty the interior. Put them on a parchment papered baking tray. Brush them with olive oil and add a little salt. Bake at 180 ºC / 350 ºF for 20 minutes.
2⃣ Finely chop the flesh of the zucchini. Chop the half onion and the carrot.
3⃣ Make a lengthwise cut to the longaniza sausages and remove its skin.
4⃣ In a wide frying pan, put the olive oil and sauté the chopped garlic clove over low heat for 2 minutes. Add the onion and the carrot. Add a pinch of salt and cook until the veggies are poached.
5⃣ Incorporate the meat of the sausages and cook, using the spatula to chop into small pieces.
6⃣ Increase the heat a little and add the white wine. Cook for a couple of minutes, until the alcohol evaporates.
7⃣ Lower the heat again and add the flour, mix well and cook for 2 minutes. Add the hot milk and cook until the sauce reduces and thickens. While it is cooking, add a little nutmeg.
8⃣ Stuff the zucchini halves generously. Top with grated cheese to taste and gratin, with the oven preheated to 200 ºC / 390 ºF, heat only on top, and placing the tray in the slot above the center. They will be ready between 5 and 10 minutes, depending on how browned you like the surface.
