Mutton Do Pyaza is a flavorful Indian dish featuring mutton cooked with a generous amount of onions. The name "Do Pyaza" translates to "two onions," indicating the dish’s use of onions in two stages of cooking.

Ingredients:

500 grams mutton (bonein or boneless, cut into pieces)

4 large onions, thinly sliced

2 tomatoes, chopped

1/2 cup yogurt

34 green chilies, slit

2 tablespoons gingergarlic paste

1/2 cup oil or ghee

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

Salt to taste

Fresh coriander leaves for garnish

Instructions:

Preparation:

Heat oil or ghee in a heavybottomed pan.

Add cumin seeds and let them splutter.

Cook Onions:

Add half of the sliced onions and sauté until they turn golden brown. Remove and set aside.

Cook Mutton:

In the same pan, add the remaining onions and cook until they soften.

Add gingergarlic paste and cook for a minute until the raw smell disappears.

Add the mutton pieces and brown them on all sides.

Spices and Tomatoes:

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

Stir in chopped tomatoes and cook until they become soft and oil starts separating from the mixture.

Simmer:

Lower the heat and add the yogurt. Mix thoroughly.

Cover and cook on low heat for about 45 minutes to 1 hour, or until the mutton is tender. Stir occasionally and add water if needed.

Finish:

Once the mutton is cooked and the gravy has thickened, add the fried onions.


Sprinkle garam masala and mix well. Cook for an additional 5 minutes.

Garnish and Serve:

Garnish with fresh coriander leaves.

Serve hot with naan, roti, or rice.
