Three Outstanding Ways to Use Zucchini

Zucchini Muffins:
4 eggs 
4 teaspoons vanilla extract 
4 tablespoons milk 
2 teaspoons baking powder
1 teaspoon baking soda 
1 teaspoon salt 
1 tablespoon cinnamon 
1/2 teaspoon nutmeg 
1 cup of favorite oil or butter 
2/3 cup brown sugar 
1 cup white sugar 
3.5 cups flour 
3.5 cups zucchini or squash, shredded and not blotted 
1 cup chocolate chips (optional) 
Preheat oven to 425°F.

Mix all wet ingredients in one bowl (minus zucchini) and dry ingredients (minus zucchini) in a second bowl. Work dry mix into wet mix and then add zucchini in at the end. 
Spoon into muffin pans, mini or regular size, and cook till golden brown. 


Stuffed Scalloped Squash:
5 scallop squashes
Boil squashes until fork tender. 
Cut in half, scoop out seeds and meat. 
Place seeds and meat into a strainer to allow the liquid to strain out. 
Heat oil in a skillet, add 2 tablespoons chopped garlic and 1 cup of onions. 
Cook down and add in the scoopedout squash, leaving squash shells on parchment paper on a baking sheet. 
Cook squash down and add in 1 teaspoon salt, 1 teaspoon pepper, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1/2 tablespoon paprika, 4oz cream cheese, 2 tablespoons Dijon mustard, and 1lb of Italian sausage. 
Mix and blend with a stick blender. 
Put the squash mixture into the squash shells and bake at 425°F until the top looks golden. 

Zucchini Fritters:
3 cups of zucchini 
1/2 cup ranch dressing 
1/2 teaspoon salt 
1/4 teaspoon pepper 
1 teaspoon garlic powder 
1 teaspoon onion powder 
1/2 teaspoon paprika 
1/2 cup flour 

Mix all ingredients together and fry until golden brown. Sprinkle with salt and enjoy!
