Recipes I followed:
3 Cup Mushroom: https://asianveganeats.wordpress.com/...

Sour Mushroom Soup:
Ingredients:
300 g fresh oyster mushrooms/baby bell mushrooms
2 TBS Flour
200 ml sour cream,
3 TBS butter,
1 finely chopped onion
1.25 L water,
3 diced potatoes,
1 TBS vinegar
Ground Caraway seed, salt, dill, sugar
Fresh Chives( or green onion), black pepper

Make a roux out of the butter and flour
Add water and whisk together well
Add potatoes, add salt and caraway
Bring to boil, lower temp and cook for about 20 minutes
In a separate pan, add butter, onion, and mushrooms and fry/cook until tender.
Add salt, pepper, and caraway to mushrooms/onions
Add onion/mushrooms to soup and cook slowly for a few minutes till everything reaches the same temperature.
Turn off stove and let the soup cool for 510 minutes. ( Important so that the sour cream doesn't congeal.)
Stir in sour cream, vinegar, dill, sugar, and chives.
