नवरात्र विशेष उपवासाची आंबोळी बनवण्यासाठी लागणारे साहित्य
आंबोळी
• १ कप वरई
• १/४ कप साबुदाणा
• २ चमचे दही
• चवीनुसार मीठ
• साजूक तूप
चटणी
• ७~८ सुक्या लाल मिरच्या
• १ मोठा चमचा दही
• १/४ कप भाजलेल्या शेंगदाण्याचं कूट
• चवीनुसार मीठ
• १/२ चमचा साखर

Let’s make Navaratra special upwasachi amboli today. With Navaratri round the corner, you must be looking for upwas or fasting recipes. So, here I am with one simple, easy yet delicious recipe. This amboli gets nice perforations and also even golden color. We are not using Eno or baking for this recipe. I will be sharing few tips and tricks to make perfect amboli. Also, I am sharing chutney recipe to serve with amboli. This chutney looks nice and gest perfect texture. Both the recipes are easy and simple. If you are bored of having the same sabudan khichadi or vrat ke chaval, then this is a good option for you. You can try this recipe at home and drop a comment for me. Ingredients:
Amboli
• 1 cup Varai / Vrat ke chaval
• 1/4 cup Sabudana
• 2 tsp Curd
• Salt to taste
• Ghee
Chutney
• 7~8 dry Red chilies
• Hot Water
• 1 tbsp Curd
• 1/4 cup roasted Peanut powder
• Salt to taste
• 1/2 tsp Sugar

Method:
Amboli
• Mix varai and sabudana well together and wash it really good 34 times with water.
• Soak it in enough water for at least 45 hours.
• Drain all the water from the soaked mixture and transfer it into a blender jar.
• Add curd and blend it into as fine batter as possible.
• Transfer the batter into a bowl.
• Cover and ferment the batter for at least 78 hours or overnight.
• Add salt and mix well.
• If needed you can add water in the batter to adjust the consistency.
• If you don’t want to ferment the batter or make instant amboli, then add Eno or baking soda into
the batter.
• Heat up a pan on medium heat and spread ghee.
• Wipe it with a tissue paper.
• You can use ground nut oil in place of ghee.
• Add a ladleful batter on the pan and spread it a little.
• When nice bubbles begin to release from the amboli, cover and cook it for about a minute.
• When lower side is roasted well, take the amboli off on a wire rack.
• Upwasachi amboli is ready. Serve it with chutney.
Chutney
• Soak dry red chilies in hot water for about 30 minutes.
• Transfer the soaked chilies into a blender jar and add curd, roasted peanut powder, salt and
sugar.
• Blend it well together in mixer and chutney is ready.
