If you really want to keep food for a long time, it needs to be stored under vacuum. Here I show you 2 ways to pull a vacuum on Mason jars using a cheap vacuum pump off of Amazon.
The first way uses a large pot with a special lid. This pot can be used not only to apply a vacuum to foods for storage but is also useful for marinating food or degassing resins.
The second way uses a special cover for the jars which can pull a vacuum around the lid. It's intended for use with FoodSaver type bag sealers but can easily be used with a regular vacuum pump.
