These pumpkin gnocchi without eggs and with little flour are very soft and quick to make, they really are worth trying! They are a simple but tasty dish. Quick and easy homemade gnocchi without potatoes, without too much mess and with lots of flavour! Thanks to this process, similar to that of water gnocchi, the dough remains soft and easy to work without using too much flour and having sticky dough around. I seasoned them simply with butter and sausages, as with pumpkin tortelli, but a tomato or mushroom sauce would also be perfect . I really hope you like it.

INGREDIENTS for 45 people:
740 g of cleaned raw pumpkin (without seeds and peel)
3 sage leaves
salt
water as needed
200 g of type 1 flour
30 g of grana padano (or other grated cheese)
a little more salt
nutmeg to taste

COOKING:
For the pumpkin: cook until you obtain a tender pulp that can be crushed with a spoon, add cheese and flour and cook until the mixture comes away from the edges
For the gnocchi: cook in boiling salted water until they float to the surface
