MODS (from what I can remember):
Law/Wanted Mechanics Improved
Longer Weather
Hydration/Pissing
Smoking
Dogs (bark too much and are slow but can kill without adding wanted level)
Emotes (barfing included) with added interactions throughout map (play piano, etc)
Hunting Wagons
Doors Open (just added, not fully explored)

I think that's all the mods I use. Just general experience enhancement.
