What I Eat in a Day to Stay Fit u0026 Healthy

I don’t count macros, never have but I am very mindful of ensuring that I have a well balanced array of foods. Healthy fats are a must, lots of fresh fruit and veggies and lean protein. Don’t neglect to indulge yourself in tastes, textures and favourites that you love, like me with my chips!

Pork Tenderloin Recipe:

Remove any tough silver skin on your tenderloin
Marinade:
1 tsp minced ginger
1 or 2 cloves minced garlic
1 tbsp olive oil
1 tbsp sesame oil
1/4 cup seasoned rice vinegar
1 tsp hot sauce
1/2 cup hoisin sauce
2 tbsp soy sauce
1 green onion chopped

Mix everything together in a ziplock bag and marinade for however long you have!
Grill on the BBQ to desired doneness. Boil the sauce on the stove to serve on the side. Garnish with parsley/more green onion
If you don’t have a grill you can enjoy this in the oven. You can sear the tenderloin on a grill pan first, cover with the sauce and bake at 375* for about 20 minutes or until desired doneness.

For the veggies I used the same marinade without the last 3 ingredients. Skip the hoisin, soy sauce and chopped green onion. Pour over your veggies and grill.
I love washing and poking the sweet potatoes and then microwaving them for 1 1/2 min then turning over for another 1 1/2 minutes, until fork tender. Slice into thicker rounds and grill. This speeds up the process big time!
